Back by popular demand!  Julie Piatt returns to the podcast to share about our recent trip to New York, our new online course  “The Ultimate Guide to Plant-Based Nutrition”  that we created in partnership with  and our panel presentation at the Apple Store SoHo —  Meet the Innovators: Revolutionizing Health  — moderated byJason Wachob, CEO of MindBodyGreen, with yoga impressario  Tara Stiles  and her husband Michael Taylor of  Strala Yoga, and meditation guru  Charlie Knoles  of the  Veda Center.

As always, Julie drops pearls of wisdom when it comes to taming the ego; how to remain neutral in moments of tension & anxiety; and how to best tap into your higher self and unlock the best, most authentic YOU – a consistent theme of the show.  We cap it off with a free amazing plantpowered dessert recipe (instructions below) and take it out with  Inside City, a track on her album Mother of Mine, by SriMati.

1. Banana chia seed pudding


  • 1/2 cup chia seeds
  • 3 cups filtered water
  • 2 ripe bananas
  • 1/2 vanilla bean
  • 1/4 cup agave


  • In a small bowl, add chia seeds to filtered water, and stir them until the become gelatinous.  Set aside.
  • Split the vanilla bean lengthwise and scrape out the inside powder.  Set aside.
  • In a food processor, blend the ripe bananas until smooth.  Add the agave and vanilla bean and process again for 30 seconds.  With the motor running, pour in the chia seed mixture and blend another 45 seconds or until pudding is smooth.

2. Coconut Cacao Cream


  • 1 can coconut cream
  • 4 tablespoons raw cocao powder
  • 1/4 cup blue agave


  • Place a can of coconut cream in the refrigerator for at least 6 hours or overnight.
  • Open the can and spoon out the firm o coconut cream right into the vitamix.  Be careful not to get any of the water from the bottom of the can.   Add the cacao powder and agave and blend for 30 seconds until the cream is smooth.
  • Now you’re ready to build your parfait!

3. Parfait 


  • 1 cup blueberries
  • 1 cup raspberries
  • Stevia leaves or mint leaves


  • In a nice glass, start with a serving of the chia pudding to fill about 1 1/2 ” of the glass.  Now add a layer of fresh blueberries & top that with a layer of coconut cream.  Raspberries are the next layer.   Top that layer with another section of chia pudding.  Finish with spoonful of coconut cream and a single raspberry.
  • Garnish with stevia or mint leaves!

We have a retreat property on Maui called Lumeria that would be the EPIC place to host it – a lot of healthy endurance athletes on Maui (plus a great destination retreat for your other listeners).     Thanks Rich and Julie for another great episode. Also pretty psyched for Julie to have her own podcast, keep us posted on that. Don’t worry Rich, I’ll listen to yours first, but it will be good to have hers in the rotation as well.

    Can’t believe I missed the appearance in NY, I just heard about it on the podcast the morning after you were at the apple store. Major bummer. If you’ve never been, give Angelika’s Kitchen (east village) a shot the next time you are in town. Not as high end as something like Pure, but still really simple and tasty.

    By the way, loving the Jai repair protein powder. I definitely think its been helping my recovery.

    Also, personally I would be very interested to hear more details about your specific training for things like Ultraman and what those race experiences were like. It was really cool in that one episode where Julie and you went into the Ultraman experience. Not that I am doing anywhere near that level of training, but it would be interesting to gain some insight into what those races demand.

    I am also responding to the retreat or workshop idea that Rich threw out on this great podcast – I have to think that the majority of Rich’s listeners are the ‘weekend warrior’ types like me. I have a demanding job and a young daughter and wife and am also training for my first marathon. Rich is amazing in that he can relate to people like me while also talking about and introducing us to a world of ultra-athletes. I would love to see an offering, maybe a weekend retreat, just for us. Bring in folks like he talks to on every podcast and ‘go deep’ in relation to the folks who may be on the beginning of their journey or maybe halfway.

    I am such a huge fan of the podcast, each of them are so unique and so intimate. I have always been a huge Rich fan, but Julie you completely won my heart on this episode. Im really so happy for you guys on your journey. You are such an inspiration for me, and you remind me that following my inner voice (or as Julie would say, authenticity), although risky, is the ONLY way. I loved that you brought up extreme faith! I am more convinced day after day that my life is about turning my will and life over to a power greater than myself, and that manifests in so many different ways. You guys are the best! Thank you for everything!

    Regarding the workshops: I would be very interested in a training workshop focused on taking performance to the next level (specifically on the training aspect). I’m a plant based athlete, currently training for the World’s Toughest Mudder. I expect I will have to run about 100 miles total on an obstacle course to be a contender to win. Thanks to discovering Finding Ultra and in turn your podcast, my education about health, wellness, and performance has skyrocketed, and I really feel like I have the potential to become a great athlete in the ultra-endurance world. I would be very interested in learning how to push myself into that next level in my training.

    HI guys! Just curious, just started listening to this episode, (I am not too far into it) and I’m curious, A why is Julie being “safe” and B what spiritual podcasts did she listen to? (I want to know for my own growth). However I also think the information would allow everyone’s growth! ….. I know I know its not everyones cup of tea! But that desn’t mean we cant all be friends! 🙂

    Regarding retreats… I’ve been following you two for the past 3 years, And love what you do. I would totally be interested in retreat, I’m a yoga instructor, My husband and and I live an active adventures life style. We would love a plant based nutri. /yoga retreat. With maybe some surfing/water time.
